Homemade Deviled Eggs

This low carb, high protein snack is perfect for a snack, meal, party food and more. Deviled eggs are one of my favorite snacks to make because they are so tasty and I never have to dose for insulin with them.

Ingredients:

  1. Eggs
  2. Mayonaise
  3. Mustard
  4. Salt
  5. Pepper
  6. Paprika (optional)

Deviled eggs are super easy to make and you can add these to your meal preps as well so you can make larger batches at once. When making these, you add the desired amount of eggs you would like into a pot of boiling water. Personally I like to add a good amount of salt to the water because when it comes to taking the shell off it makes it immensely easier. I recommend boiling them for about 20 minutes and then either put them in a bowl of ice, or in the refrigerator. Sometimes if I am inpatient I put them in both!

After your eggs are boiled and cooled off, it is time to peel the shell off the eggs, and if you haven’t done this before, you just crack the side of it and then peel that off. When you are done with that, you will cut the eggs in half and then squeeze the yolk into a bowl. Mix the yolk, mayonnaise, mustard, salt, and pepper in the bowl. There is no set amount of each ingredient, it depends on how much you want to make and how it tastes to you. After that mixture is smooth, you can either take a spoon and scoop it into the egg whites, or you can place it in a zip lock bag, cut the tip corner off and squeeze it into them. Sprinkle a little bit of paprika on the top and you have a great low carb, high protein snack!
